In 1976, Manuel Gallegos Sr. and his brother-in-law George Garcia noticed a gap—no local spot served authentic Mexican home cooking. Over kitchen-table brainstorming, “El Burrito” was born, sounding better than “El Taco.” Using family recipes handed down through generations, they started a humble take-out restaurant, serving meals from crock pots and soda in paper cups.

After 18 months, George moved on, but the community’s love for the food kept Manuel Sr. going. With unmatched work ethic and support from his family, he expanded El Burrito into a full-service dine-in restaurant at 699 South State. By 1989, he partnered with his son Manuel Jr., relocated to 1145 South State Street, and renamed it Manuel’s El Burrito Restaurant & Cantina.
